We are staying close to home and avoiding all of the Semana Santa craziness going on at the beaches.
It is cooler here the last couple of days so I have been doing some baking, kind of storing up on all the sweets before it gets too hot to bake.
Yesterday I baked Bran Muffins and Chocolate Chip Cookies and also tried a new recipe for Pork Sausage Patties. The muffins and cookies turned out well and the recipe for the pork sausage patties wasn't bad. Every time I make something new I always ask Roy if it is a make again recipe or not, so I know if the recipe is a keeper or not. Roy is pretty good and eats most of my not so great cooking/baking so the bar is not set too high for me.
I used to read a lot of blogs, lately I have been reading less and less of them; but I still like reading cooking/baking blogs. (As an aside, reading cooking blogs written in spanish is a good way to learn kitchen terms.) One of my favorite cooking/baking blogs that I read is written by Leslie . A while ago she posted the recipe for a Pineapple Upside Down Cake that looked really good so today I tried it.
My round cake pans are only good for small recipe layer cakes so didn't think that the sides would be high enough to fit everything in and allow for any rising to happen. I decided to use a bigger round pan that I have. Naturally then I needed more butter and brown sugar to go on the bottom with the pineapple and cherries; but you can never go wrong by having extra butter and brown sugar right? I didn't measure that part just added until it looked like it would be good. As the pan was bigger I made a double batch of the cake batter and of course it needed a longer baking time because of this. All in all it turned out really good and tastes great. Roy has decided after 2 pieces that this recipe is a keeper!!
